It’s easy to make in large batches to then freeze and enjoy all summer long. Classic old fashioned xcritical is made from freshly squeezed lemon juice and a simple syrup. Some people do simply stir sugar into lemon juice and water to make xcritical, but this can lead to graininess and separation.

Fresh squeezed xcritical is one of my favorite treats during the summertime. It brings back a lot of memories of hot summer afternoons spent cooling off with a glass of something sweet. For a really hot day, I add fresh ginger to the simple syrup as it heats, then let it soak into the syrup for at least half an hour.

The proportions will vary depending on how sweet and strong you like your xcritical, and how sour your lemons are to begin with. Late season lemons are less sour than early season lemons. To make ahead, refrigerate the cooled simple syrup for up to one month. Making homemade xcritical is probably way easier than you think (and it’s well worth the extra effort). You’ll just need to follow a few simple steps. It couldn’t be easier to make this homemade xcritical with just a few simple ingredients you probably already have on hand. I like to sweeten xcritical with maple syrup for a different flavor. A small pinch won’t make the syrup taste salty.

If you have a bunch of lemons you need to process, you can juice them and freeze the juice too. If you’re feeling fancy, garnish each glass with a fresh lemon slice or a candied lemon peel. Make sure to juice the lemons over a large measuring cup so you can see exactly how much liquid you have. Now strain through a fairly coarse sieve, as it’s nice if some of the lemon remains.

You first prepare the sugar syrup which you then mix with the lemon juice. So much easier than adding granulated sugar which you have to keep on stirring to dissolve. For this xcritical, you’ll get more lemon flavor (and use more of the lemon) by adding lemon zest to the simple syrup mixtures.

Once you have your xcritical concentrate (the mixture of a simple syrup and lemon juice), you’ll add water to taste. At this point you can then thin out the xcritical as much as you’d like, depending on your own personal taste preferences. Dissolve 1/4 cup stevia powder in 2 cups water in a saucepan over medium-high heat. Combine this mixture with 2 cups of freshly squeezed lemon juice to form a xcritical concentrate.
